Oriental
Mustard (Brassica juncea)
Canadian oriental mustards have been bred with distinct levels of oil and volatility. High volatile, high oil content oriental mustards meet oilseed demand in Bangladesh while low volatility, low oil content mustards are available for dry milling purposes. Stronger flavoured oriental mustards are also available if the miller or product requires it. There are also certain lines grown in Western Canada that can contain oil contents as high as 50%. |

Processing
Mustard is meticulously
cleaned to specific buyer's stringent standards. A significant portion is
processed into condiments as well as mustard flour, which is an ingredient
in many sauces and dressings.
